This 2lb. French country boule is made with a french country style dough. 20% of the total flour volume is prefermented as a paté fermentée for 24-48 hours before being added to the final dough.
After being mixed, the final dough undergoes 24 hrs of cold fermentation before it is shaped, proofed and baked.
The final result is a bread that is similar to french bread but with a more developed whole-grain character and a hearty golden-brown crust.
