These bagels are made in the traditional New York-style. The dough is started with a 60-90 minute wet poolish preferment, with which the remainder of the flour is mixed.
After the final dough is complete, the bagels are hand shaped and proofed overnight in the refrigerator. The next day, they are boiled in alkalized water and baked.
They have that classic chewy texture of a NY style bagel and are a Mama Mel's favorite.
The bagels come in dozen or half-dozen packs with choice of: • Plain • 3-seed (sesame, poppy, chia) • Sesame • Poppy • Onion • Cinnamon Raisin • Blueberry • Half Cinnamon Raisin/ Half Blueberry • Mixed Plain and Seeded*
*For a half dozen, mixed is two plain, two 3-seed, one sesame, and one poppy. For a dozen, it's three of each type of seeded bagel plus 3 plain bagels.
Ingredients: Filtered water, California-sourced brown rice flour, tapioca flour, millet flour, sorghum flour, potato starch/flour, golden flax seed, bakers yeast and GF wild sourdough starter, non-gmo xanthan gum, guar gum, sea salt, cane sugar. Vegan.
Cinnamon raisin bagels contain ground cinnamon and sulphur-dioxide free raisins that contain 1% vegetable oil to prevent clumping.
Blueberry bagels contain pacific northwest blueberries that contain a small amount of cane sugar and sunflower oil.
Onion bagels contain dried onion.
All bagels contain a trace amount of olive oil.
