This 2lb. buckwheat boule is made with a french country style dough, enriched with the hearty flavor of buckwheat. 20% of the total flour volume is prefermented as a paté fermentée for 24-48 hours before being added to the final dough.
After being mixed, the final dough undergoes 24 hrs of cold fermentation before it is shaped, proofed and baked.
The final loaf imparts the mildly nutty and subtly sweet taste of buckwheat.
